Ingredients

1 cup Yellow Cornmeal, fine ground

½ cup Complete Pancake Mix

¾ cup warm water

Pinch Salt

¾ cup Vegetable Oil

8 slices Mozzarella Cheese

2 pieces Pass the Honey Honeycomb

Directions

Mix cornmeal, pancake mix, and salt in mixing bowl, slowly stir in water until a thick dough is achieved.

Portion dough into 4 equal balls.

Roll balls and form into patties around 1/4” thick.

Place cast iron pan on stove top to heat over medium heat.

Add vegetable oil when hot and place arepa rounds into pan.

Cook on one side until browned, flip and continue cooking on other side for 2-3 minutes, turning heat down so you don’t burn.

Remove from pan and allow to cool slightly.

Slice arepas in half across to form a top and bottom, add two cheese slices to bottom of each and replace top.

Place in 350-degree oven for 3 minutes or until cheese is melted.

For the last 30 seconds of oven time, top with a piece of honeycomb to start melting.

Serve immediately.
